Ingredients

1 (5–6 lb) prime rib roast (bone-in or boneless)

2 tablespoons kosher salt

1 tablespoon freshly ground black pepper

1 tablespoon garlic (minced or powder)

1 tablespoon fresh rosemary (chopped)

1 tablespoon fresh thyme (chopped)

2 tablespoons olive oil


Instructions

1. Remove roast from refrigerator and let it come to room temperature (about 2 hours). Pat dry with paper towels.

2. Rub olive oil over the entire surface of the roast.

3. In a small bowl, mix salt, pepper, garlic, rosemary, and thyme. Press mixture all over the roast.

4. Preheat oven to 450°F (232°C).

5. Place roast bone-side down (or fat-side up if boneless) on a rack in a roasting pan.

6. Roast for 20 minutes at 450°F to sear.

7. Reduce oven temperature to 325°F (163°C). Continue roasting until internal temp reaches 130°F for medium rare (about 15 minutes per pound).

8. Remove roast and tent loosely with foil. Let rest for 20–30 minutes before slicing.

9. Slice and serve with au jus or horseradish sauce.
