Description

A hearty, cheesy, and flavor-packed twist on the traditional meatloaf, this Easy Italian Meatloaf brings together rich marinara, ground beef, and melty mozzarella for a satisfying meal. Perfect for a weeknight family dinner or meal prep for the week ahead.


Ingredients

2 lbs ground beef (80/20 blend)

1 cup breadcrumbs

2 large eggs

1/2 onion, finely chopped

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

2 tsp Italian seasoning

1 cup marinara sauce (divided)

1 1/2 cups shredded mozzarella cheese

Fresh parsley (optional garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
  2. In a large bowl, mix together ground beef, breadcrumbs, eggs, onion, garlic, Parmesan, Italian seasoning, and 1/2 cup marinara sauce until just combined.
  3. Shape into a loaf and place in the prepared pan.
  4. Bake uncovered for 45 minutes.
  5. Remove from oven, top with remaining marinara sauce and shredded mozzarella.
  6. Return to oven and bake for another 15 minutes, or until internal temperature reaches 160°F (71°C).
  7. Let rest 5-10 minutes before slicing. Garnish with chopped parsley if desired.
