A hearty, cheesy, and flavor-packed twist on the traditional meatloaf, this Easy Italian Meatloaf brings together rich marinara, ground beef, and melty mozzarella for a satisfying meal. Perfect for a weeknight family dinner or meal prep for the week ahead.
Ingredients
2 lbs ground beef (80/20 blend)
1 cup breadcrumbs
2 large eggs
1/2 onion, finely chopped
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tsp Italian seasoning
1 cup marinara sauce (divided)
1 1/2 cups shredded mozzarella cheese
Fresh parsley (optional garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
- In a large bowl, mix together ground beef, breadcrumbs, eggs, onion, garlic, Parmesan, Italian seasoning, and 1/2 cup marinara sauce until just combined.
- Shape into a loaf and place in the prepared pan.
- Bake uncovered for 45 minutes.
- Remove from oven, top with remaining marinara sauce and shredded mozzarella.
- Return to oven and bake for another 15 minutes, or until internal temperature reaches 160°F (71°C).
- Let rest 5-10 minutes before slicing. Garnish with chopped parsley if desired.
