Description
These Easy Homemade Beefy Melt Burritos are the perfect combination of seasoned beef, gooey nacho cheese, sweet corn, and melty cheddar, all wrapped in a warm toasted tortilla. Fast, flavorful, and family-friendly—they’re a delicious dinner or meal prep go-to.
Ingredients
1 lb ground beef
2 tablespoons taco seasoning
1/4 cup water
1 cup nacho cheese sauce
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup corn kernels (canned or thawed from frozen)
4 large flour tortillas (burrito size)
Instructions
1. In a large skillet over medium-high heat, brown the ground beef. Break it apart with a spatula until no pink remains.
2. Drain any excess fat, then stir in taco seasoning and 1/4 cup of water. Let it simmer for 3–4 minutes until the liquid thickens.
3. In a separate saucepan or microwave-safe bowl, warm the nacho cheese sauce until hot and creamy.
4. Lay out your tortillas on a flat surface. On each, layer beef, nacho cheese, corn, shredded cheddar, and a spoonful of sour cream.
5. Fold in the sides of the tortilla, then roll tightly from the bottom to form a burrito.
6. Heat a clean skillet over medium heat. Toast each burrito seam-side down for 1–2 minutes per side until golden and crispy.
7. Serve hot with optional salsa, guacamole, or extra nacho cheese for dipping.
Notes
For best results, use freshly grated cheddar for superior melt and texture.
Warm tortillas briefly before filling to prevent tearing when rolling.
For meal prep, wrap tightly in foil and refrigerate or freeze individually.
