Description

A comforting, cheesy, and protein-packed casserole made with spinach, feta, and creamy cheeses. This low-carb dish is perfect for meal prep, brunches, or an easy weeknight dinner.


Ingredients

16 oz frozen chopped spinach, thawed and drained

4 large eggs

1 cup cottage cheese or ricotta

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

1/4 teaspoon ground nutmeg (optional)

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)


Instructions

1. Preheat your oven to 375°F (190°C).

2. Thaw the frozen spinach and squeeze out as much moisture as possible using a strainer or cheesecloth.

3. In a skillet over medium heat, warm olive oil. Add diced onion and sauté until translucent (about 4 minutes). Stir in garlic and cook for 1 minute more. Set aside to cool slightly.

4. In a large mixing bowl, combine the spinach, crumbled feta, cottage or ricotta cheese, sautéed onion and garlic, and nutmeg if using.

5. Crack the eggs into the bowl, season with salt and pepper, and mix everything thoroughly until well combined.

6. Grease a 9×13-inch baking dish and spread the mixture evenly inside.

7. Sprinkle shredded mozzarella cheese over the top.

8. Bake for 35–40 minutes or until the top is golden and the center is set.

9. Let the casserole rest for 10 minutes before slicing and serving.

Notes

Be sure to drain the spinach thoroughly—excess moisture can make the casserole watery.

For the best flavor, use block feta in brine instead of pre-crumbled feta.

This casserole can be made ahead and refrigerated overnight before baking.
