Description

These Easy Date Snickers are a no-bake, wholesome twist on the classic candy bar. Made with soft Medjool dates, creamy peanut butter, crunchy roasted peanuts, and rich dark chocolate, they deliver the perfect balance of sweet and salty in every bite. They are naturally sweetened, easy to prepare, and perfect for meal prep or a healthier dessert option.


Ingredients

12 Medjool dates, pitted

1/2 cup creamy peanut butter

1/3 cup roasted salted peanuts

1 cup dark chocolate chips

1 teaspoon coconut oil

1/2 teaspoon flaky sea salt (optional)


Instructions

1. Slice each Medjool date lengthwise and remove the pit, keeping the date intact like a pocket.

2. Fill each date with about 1 teaspoon of peanut butter.

3. Press 2 to 3 roasted peanuts into the peanut butter inside each date.

4. Melt the dark chocolate chips with coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each until smooth.

5. Dip each stuffed date into the melted chocolate using a fork, ensuring it is fully coated. Let excess chocolate drip off.

6. Place the coated dates onto a parchment-lined baking sheet.

7. Sprinkle lightly with flaky sea salt if desired.

8. Refrigerate for 20 to 30 minutes, or until the chocolate is fully set.

Notes

Use soft, fresh Medjool dates for the best caramel-like texture. If your dates feel dry, soak them in warm water for 10 minutes and pat dry before filling.

For easier dipping, freeze the stuffed dates for 10 minutes before coating in chocolate. This helps the peanut butter stay firm.

Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months for longer storage.
