Ingredients

34 lb beef brisket (flat cut recommended)

2 large yellow onions, sliced

2 cups beef broth

2 tbsp tomato paste

2 tbsp Worcestershire sauce

4 garlic cloves, minced

1 tsp fresh thyme (or 1/2 tsp dried thyme)

Salt and black pepper to taste

1 tbsp cornstarch (or flour) + 2 tbsp water (for slurry)

1 tbsp vegetable oil (for searing)


Instructions

  1. Pat the brisket dry and season with salt and pepper.
  2. Heat oil in a skillet and sear the brisket on both sides until browned.
  3. Place onions in the bottom of the crockpot and lay the seared brisket on top.
  4. In a bowl, whisk together broth, tomato paste, Worcestershire, and garlic. Pour over the brisket.
  5. Add thyme, cover, and cook on LOW for 8–10 hours or HIGH for 5–6 hours.
  6. Remove brisket and tent with foil. Transfer liquid and onions to a saucepan.
  7. Bring to a simmer. Stir in slurry (cornstarch + water) and whisk until thickened.
  8. Slice brisket against the grain, pour over the gravy, and serve.
