A creamy, cheesy one-pot wonder that brings together juicy seared chicken, tender cheese tortellini, and a luscious garlic sauce made with Velveeta and mozzarella. Quick to prepare and irresistibly flavorful—perfect for weeknights or entertaining guests.
Ingredients
1 lb chicken breasts or thighs
12 oz cheese tortellini
1 ½ cups Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
3 cloves garlic, minced (or 1 tbsp garlic paste)
1 cup heavy cream
2 tbsp butter
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
1 tbsp fresh parsley, chopped (optional)
Instructions
1. Season chicken with salt, pepper, and Italian seasoning.
2. In a large skillet, heat olive oil over medium-high heat. Sear chicken 4-5 minutes per side until golden and cooked through. Remove and slice.
3. Lower heat to medium, melt butter in the same skillet. Sauté garlic until fragrant.
4. Optional: Stir in 1 tbsp flour to make a light roux if you want a thicker sauce.
5. Whisk in heavy cream gradually, letting it warm before adding cheese.
6. Add Velveeta cubes and stir until fully melted. Then add mozzarella and stir again until smooth.
7. Stir in cheese tortellini and simmer for 5–7 minutes until tender.
8. Return sliced chicken on top, spoon sauce over, and garnish with parsley. Serve warm.
Notes
Use freshly minced garlic for the most aromatic and bold flavor.
For a thinner sauce, skip the roux and add an extra splash of cream.
Let the dish rest 5 minutes before serving to thicken naturally.
