2 cups cooked shredded chicken

1 can refrigerated biscuit dough (8-count)

2 carrots, diced

2 celery stalks, diced

1 cup frozen peas

1 yellow onion, diced

4 cups chicken broth

1 cup heavy cream or whole milk

4 tablespoons butter

3 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon dried thyme


Instructions

1. Melt butter in a Dutch oven over medium heat. Add diced onion, carrots, and celery. Sauté for 5–7 minutes until softened.

2. Stir in flour and cook for 1 minute. Slowly whisk in chicken broth to create a smooth, thickened base.

3. Add shredded chicken, heavy cream, salt, pepper, garlic powder, and thyme. Let simmer 5–10 minutes.

4. Cut biscuits into quarters and place on top of the stew. Cover and steam for 10 minutes.

5. Uncover and transfer pot to a 400°F oven. Bake for 10–12 minutes until biscuits are golden.

6. Add frozen peas in the last few minutes. Adjust seasoning if needed and serve hot.

Notes

Let the broth simmer uncovered briefly before adding biscuits to avoid soggy tops.
