Ingredients
2 cups cooked white rice
16 oz cooked meatballs (homemade or store-bought)
1 can (10.5 oz) cream of mushroom soup
1 cup milk
1 ½ cups shredded cheddar cheese, divided
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. In a mixing bowl, whisk together the cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Stir in ¾ cup of shredded cheddar cheese.
3. Spread the cooked rice evenly in the prepared baking dish.
4. Pour the soup mixture over the rice and stir to coat evenly.
5. Arrange the meatballs on top of the rice mixture.
6. Sprinkle the remaining cheddar cheese over the top.
7. Cover with aluminum foil and bake for 25 minutes.
8. Remove foil and bake for another 10 minutes until the cheese is melted and bubbly.
9. Let rest for 5 minutes, then garnish with chopped parsley and serve.
Notes
Use freshly grated cheese for better melting and flavor.
Make sure the meatballs are thawed if using frozen ones.
