Ingredients
Freshly grated carrots
Brown sugar
Granulated sugar
All-purpose flour
Baking soda
Baking powder
Ground cinnamon
Ground nutmeg
Salt
Eggs
Vegetable oil
Vanilla extract
Cream cheese
Butter
Powdered sugar
Chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13″ baking dish.
- Mix wet ingredients: In a large bowl, whisk eggs, both sugars, oil, and vanilla.
- Add carrots: Fold in grated carrots.
- Mix dry ingredients: In a separate bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine: Gradually stir dry ingredients into the wet mixture until just combined.
- Bake: Spread batter in the pan and bake 28–32 minutes, until a toothpick comes out clean.
- Cool completely before frosting.
- Make frosting: Beat cream cheese and butter until creamy. Add powdered sugar and vanilla; beat until fluffy.
- Frost bars and sprinkle with chopped pecans if using. Slice and serve.
