These Easy Caramelized Onion Mashed Potatoes are creamy, buttery, and topped with perfectly sweet caramelized onions. The combo creates a comforting, gourmet side dish that works just as well for holiday dinners as it does for weeknight meals.
Ingredients
2 pounds Yukon Gold potatoes
4 tablespoons unsalted butter (divided)
1 cup heavy cream
1/2 cup whole milk
2 large sweet yellow onions, thinly sliced
1 tablespoon olive oil
1 teaspoon salt (or to taste)
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
1. Peel and quarter the Yukon Gold potatoes. Add to a large pot with salted water. Bring to a boil and cook for 15–20 minutes until fork-tender.
2. While potatoes cook, heat olive oil and 1 tablespoon butter in a skillet over medium-low heat. Add sliced onions and cook slowly, stirring often, for 25–30 minutes until golden and jammy.
3. Drain potatoes and return them to the pot. Add remaining butter, warm milk, and heavy cream. Mash using a potato masher or ricer until smooth and creamy.
4. Season the mashed potatoes with salt and black pepper to taste. Stir to combine and adjust texture with additional milk or cream if needed.
5. Transfer mashed potatoes to a serving dish. Top with caramelized onions and garnish with chopped fresh parsley.
Notes
Use a potato ricer for the smoothest texture. A masher gives a rustic feel but can leave small lumps.
Always warm your milk and cream before adding to potatoes to avoid a gummy texture.
Caramelize onions slowly on low heat—don’t rush it! Browning too fast will make them bitter, not sweet.
