Ingredients

2 cups cooked white rice

2 cups fresh broccoli florets (lightly steamed)

2 cups shredded cheddar cheese (divided)

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

2 tablespoons unsalted butter

1/2 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper


Instructions

1. Cook the rice according to package instructions and set aside.

2. Steam the broccoli just until tender and vibrant green; avoid overcooking.

3. In a large saucepan, melt butter over medium heat. Stir in cream of mushroom soup, milk, garlic powder, and most of the shredded cheese. Mix until smooth and melted.

4. Add the cooked rice and broccoli to the cheese sauce. Stir gently to combine. Season with salt and pepper.

5. Pour the mixture into a greased 9×13-inch baking dish. Sprinkle the remaining cheese on top.

6. Cover with foil and bake at 350°F (175°C) for 20 minutes.

7. Remove foil and bake an additional 10 minutes or until the cheese is bubbly and golden.

Notes

Use freshly shredded cheese for best melt and flavor—bagged pre-shredded cheese may affect texture.

Don’t oversteam the broccoli; it will continue to cook while baking.
