Description
These Easy Baked Stuffed Peppers are a wholesome dinner favorite, filled with seasoned ground beef, tender rice, tomatoes, and topped with gooey cheese. Perfect for meal prep, family dinners, or a cozy night in, they’re as satisfying as they are simple.
Ingredients
4 bell peppers
1 pound ground beef
1 cup cooked rice
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, drained
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar or mozzarella cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Slice off the tops of the bell peppers and remove seeds and membranes. Lightly drizzle with oil and set in a baking dish, cut-side up.
2. In a skillet over medium heat, cook ground beef until browned. Add diced onion and garlic; sauté until fragrant.
3. Stir in cooked rice, drained diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
4. Spoon the filling into each pepper. Top with shredded cheese.
5. Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove foil and bake an additional 10–15 minutes until cheese is bubbly and golden.
6. Garnish with fresh parsley if desired. Serve hot and enjoy!
Notes
Parboil peppers for 3–4 minutes if you prefer a very soft texture.
Swap rice with quinoa or cauliflower rice for a low-carb version.
Use a mix of cheddar and mozzarella or add pepper jack for extra flavor.
