Ingredients
1 box instant vanilla pudding mix (3.4 oz)
1 ½ cups cold milk
1 container Cool Whip (8 oz)
3 to 4 drops green food coloring
¼ teaspoon peppermint extract (optional)
1 chocolate pie crust (9-inch, graham or Oreo-based)
Whipped cream (for topping)
Crushed candy canes (for topping)
Instructions
1. In a large mixing bowl, whisk together instant vanilla pudding mix and cold milk for about 2 minutes until thickened.
2. Add green food coloring and peppermint extract (if using). Whisk until the color is evenly distributed.
3. Gently fold in the Cool Whip with a rubber spatula until fully combined and fluffy.
4. Pour the mixture into the prepared chocolate pie crust. Smooth the top with a spatula.
5. Cover the pie with plastic wrap and refrigerate for at least 2 hours or until set.
6. Just before serving, top with extra whipped cream and sprinkle with crushed candy canes.
Notes
For clean slices, use a sharp knife dipped in warm water and wipe between cuts.
Only add toppings right before serving to keep the candy canes crisp.
Want a flavor twist? Swap peppermint for vanilla or almond extract.
