Ingredients

1 cup unsalted butter

1 cup granulated sugar

1/4 teaspoon salt

1 teaspoon vanilla extract

2 cups white chocolate chips or melting wafers

1 tablespoon ground cinnamon

1/4 cup granulated sugar (for coating)


Instructions

1. Line a baking sheet with parchment paper. In a shallow dish, mix the 1/4 cup sugar and cinnamon. Set aside.

2. In a heavy-bottomed saucepan, melt butter over medium heat. Stir in 1 cup sugar and salt.

3. Bring the mixture to a boil, stirring constantly. Attach a candy thermometer and cook until it reaches 285°F (hard crack stage).

4. Remove from heat and stir in vanilla extract. Immediately pour onto the prepared baking sheet.

5. Use an offset spatula to spread the toffee into an even 1/4-inch layer. Allow it to cool completely.

6. Melt the white chocolate in the microwave in 20-second increments until smooth.

7. Spread melted white chocolate evenly over the cooled toffee.

8. While the chocolate is still tacky, sprinkle the cinnamon-sugar mixture generously over the top.

9. Allow the chocolate to set completely.

10. Break or slice into squares. Store in an airtight container at room temperature for up to 2 weeks.

Notes

Use a candy thermometer to ensure your toffee reaches 285°F—this ensures perfect snap and no stickiness.

Let the toffee cool fully before applying chocolate to avoid melting or spreading issues.
