Description
A rich and satisfying seafood dinner made with buttery garlic shrimp, served over fragrant herb rice. Ready in under 30 minutes, this is a quick gourmet meal that’s perfect for weeknights or special occasions.
Ingredients
1 lb raw shrimp, peeled and deveined
2 tablespoons unsalted butter
3 cloves garlic, freshly minced
1/2 cup heavy cream
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
2 cups cooked white or brown rice
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1/4 teaspoon chili flakes (optional)
Instructions
1. Cook rice according to package directions. Fluff and mix with olive oil, parsley, and a pinch of salt. Set aside.
2. Pat shrimp dry and season with salt and pepper.
3. In a large skillet, heat olive oil over medium-high heat. Sear shrimp 1–2 minutes per side until pink and lightly crisped. Remove and set aside.
4. In the same skillet, reduce heat to medium. Add butter and garlic, sauté for 30 seconds until fragrant.
5. Add heavy cream, lemon juice, and chili flakes. Let simmer for 2–3 minutes to thicken.
6. Return shrimp to the skillet and coat well in the garlic butter sauce. Simmer for 1 more minute.
7. Plate herb rice in bowls, top with shrimp and spoon over extra sauce. Garnish with parsley and lemon zest if desired.
Notes
Don’t overcook the shrimp—1 to 2 minutes per side is plenty.
For a lighter option, use half-and-half instead of heavy cream.
Fresh lemon juice and zest brighten the whole dish—don’t skip them.
