Decadent Sweet Potato Crème Brûlée is a cozy-meets-elegant dessert that transforms roasted sweet potatoes into velvety custard boats, topped with a caramelized sugar crust. It’s the perfect combination of earthy sweetness, creamy richness, and crackly texture.
Ingredients
2 large sweet potatoes
1 cup heavy cream
4 egg yolks
1/4 cup brown sugar
1/4 cup granulated sugar (for topping)
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
Instructions
1. Preheat oven to 400°F (200°C). Slice sweet potatoes lengthwise and place cut-side down on a foil-lined baking sheet. Roast 40-45 minutes until tender.
2. Let cool, then scoop out most of the flesh, leaving a thin border. Mash until smooth.
3. In a bowl, whisk mashed sweet potato, egg yolks, brown sugar, heavy cream, vanilla, cinnamon, nutmeg, and salt until creamy.
4. Spoon mixture back into sweet potato skins. Bake at 325°F (160°C) for 25-30 minutes, until just set with a slight wobble.
5. Cool slightly. Sprinkle granulated sugar evenly on top. Use a kitchen torch or broiler to caramelize until golden and crisp.
Notes
For extra smooth custard, strain the mixture before filling the shells.
Caramelize the sugar just before serving for the best crackly texture.
You can swap heavy cream with full-fat coconut milk for a dairy-free version.
