This Crock Pot Creamy Cajun Chicken Pasta is the ultimate comfort meal—rich, creamy, and full of bold Cajun flavor. Tender shredded chicken slow-cooked in a luscious cream sauce, then tossed with pasta for a dinner that feels indulgent but is surprisingly simple to make.
Ingredients
2 lbs chicken breasts
2 tablespoons Cajun seasoning
1 small onion, diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 1/2 cups heavy cream
8 oz cream cheese, cubed
1/2 cup grated Parmesan cheese
12 oz penne or rotini pasta
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Toss chicken breasts with Cajun seasoning until evenly coated.
2. In the crock pot, layer the seasoned chicken, diced onion, minced garlic, and sun-dried tomatoes.
3. Pour in heavy cream and add cubed cream cheese on top.
4. Cover and cook on low for 5–6 hours or high for 2.5–3 hours.
5. Once cooked, shred chicken with two forks directly in the crock pot.
6. Stir the mixture until cream cheese is fully incorporated into a creamy sauce.
7. Cook pasta separately to al dente, then drain and fold into the chicken mixture.
8. Stir in grated Parmesan until melted and smooth.
9. Garnish with chopped parsley and serve hot.
Notes
For extra heat, add a pinch of cayenne pepper or sliced jalapeños.
Let the pasta sit uncovered for 10 minutes after mixing for a thicker sauce.
Chicken thighs can be used instead of breasts for a juicier texture.
