Ingredients
3 medium sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
¾ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh cilantro (optional for garnish)
Instructions
1. Preheat your oven to 425°F (220°C).
2. Peel and cut the sweet potatoes into evenly-sized 1-inch cubes for uniform roasting.
3. In a large bowl, combine the sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Toss well to ensure every piece is evenly coated.
4. Line a baking sheet with parchment paper or a silicone baking mat. Spread the sweet potatoes out in a single layer, leaving space between each piece to avoid steaming.
5. Roast in the preheated oven for 25–30 minutes, flipping halfway through to ensure even browning and crisp edges.
6. Once golden and crisp on the outside, remove from the oven.
