These Crispy Parmesan-Crusted Roasted Brussels Sprouts are golden on the outside, tender inside, and bursting with savory flavor. Roasting caramelizes the sprouts while the cheesy crust adds irresistible crunch. Perfect as a side dish, appetizer, or even a wholesome snack.
Ingredients
1½ pounds Brussels sprouts
2 tablespoons olive oil
½ cup grated Parmesan cheese
½ cup panko breadcrumbs
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Preheat the oven to 425°F (218°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Trim the ends of the Brussels sprouts, remove any yellow leaves, and slice each sprout in half lengthwise.
3. In a large mixing bowl, toss the halved sprouts with olive oil, garlic powder, salt, and pepper.
4. Add grated Parmesan and panko breadcrumbs. Toss until the sprouts are evenly coated.
5. Arrange the sprouts cut-side down on the baking sheet in a single layer for optimal caramelization.
6. Roast in the preheated oven for 20–25 minutes, or until the edges are golden brown and crisp.
7. Remove from oven and serve immediately. Optionally, sprinkle extra Parmesan or lemon zest before serving.
Notes
Always roast cut-side down for max crisp and caramelization.
Freshly grated Parmesan yields a better melt and flavor than pre-shredded.
For extra crisp, use a convection setting or finish under the broiler for 1–2 minutes.
