Ingredients

1 pound ground turkey

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

½ cup shredded carrots

¼ cup fresh cilantro or mint, chopped

12 rice paper sheets

2 tablespoons neutral oil (for frying)


Instructions

1. In a large mixing bowl, combine ground turkey, garlic, ginger, green onions, soy sauce, sesame oil, and carrots. Stir gently until evenly mixed.

2. Fill a shallow dish with warm water. Soak each rice paper sheet for 10 seconds until soft but not overly sticky.

3. Place the softened sheet on a damp surface. Spoon about 1–2 tablespoons of filling into the center. Fold in the sides, then roll up tightly. Optionally, double wrap for extra crispiness.

4. Heat oil in a non-stick skillet over medium heat. Place dumplings seam-side down and fry for 2–3 minutes on each side until golden brown and crisp.

5. Remove from pan and place on a paper towel-lined plate. Serve warm with your favorite dipping sauce and garnish with fresh herbs or crushed peanuts if desired.

Notes

Don’t over-soak the rice paper; 10 seconds in warm water is just right to keep it from tearing.

A double layer of rice paper adds crispness and prevents leakage.
