Ingredients

2 pounds Yukon Gold potatoes

2 tablespoons olive oil

2 cloves garlic, minced

1 cup grated Parmesan cheese

1 teaspoon fresh thyme or rosemary (or ½ tsp dried)

½ teaspoon salt

½ teaspoon black pepper

½ cup sliced shallots or red onion (optional)


Instructions

1. Slice the potatoes into ⅓ to ½-inch thick rounds using a knife or mandoline.

2. Preheat oven to 400°F (200°C). Lightly oil a cast iron skillet or baking dish.

3. In a mixing bowl, toss sliced potatoes with olive oil, garlic, salt, pepper, and herbs.

4. Sprinkle half of the Parmesan in the skillet. Layer the potato slices in a shingled pattern.

5. Top with remaining cheese and optional onion slices.

6. Roast uncovered for 30–35 minutes, until edges are crisp and cheese is golden.

7. Let cool slightly. Garnish with extra herbs and black pepper. Serve hot.
