Crispy Baked Cauliflower Bites are golden, spiced florets roasted to perfection and served with a creamy garlic sauce. This easy plant-forward recipe is ideal for parties, snack platters, or light dinners, offering big flavor with a healthy twist.
Ingredients
4 cups cauliflower florets
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup Greek yogurt or sour cream
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley (optional)
Pinch of salt, to taste
Instructions
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
2. In a large bowl, toss cauliflower florets with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
3. Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 25–30 minutes, flipping once halfway through, until crispy and golden on the edges.
4. While roasting, blend or whisk together Greek yogurt, minced garlic, lemon juice, parsley, and salt until smooth and creamy.
5. Remove cauliflower from the oven. Serve immediately with the garlic sauce drizzled over or on the side.
Notes
Use parchment or a silicone mat to avoid soggy bites and promote browning.
For extra crispiness, roast at the top rack during the last 5 minutes.
The garlic sauce also pairs well with grilled veggies or wraps—double the batch!
