Ingredients
1 lb boneless chicken breast, diced
12 oz rotini pasta
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
3 cloves garlic, minced
1 cup whole milk
2 tbsp butter
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp dried basil or Italian herbs (optional)
Instructions
1. Boil a medium saucepan of salted water. Add rotini and cook until al dente. Drain and set aside.
2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until golden and cooked through. Remove from skillet.
3. In the same skillet, lower heat to medium. Add remaining butter and minced garlic. Sauté until fragrant.
4. Pour in milk and slowly add Velveeta cubes. Whisk until melted and smooth. Stir in mozzarella until creamy.
5. Add cooked rotini and stir to coat evenly in sauce. Return chicken to skillet and mix until combined.
6. Sprinkle with dried basil or Italian herbs. Serve hot.
Notes
For a deeper flavor, pan-sear the chicken in butter and olive oil until well-browned on all sides.
