Ingredients

12 oz fettuccine pasta

1.5 lbs boneless skinless chicken thighs

2 cups Velveeta cheese, cubed

1 cup heavy cream

4 cloves garlic, minced

2 tablespoons butter

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

2 tablespoons chopped parsley

1/2 cup reserved pasta water (optional)


Instructions

1. Season chicken thighs with salt, pepper, and paprika.

2. In a large skillet, heat olive oil over medium-high. Sear chicken until golden brown and cooked through. Set aside.

3. In a separate large pot, bring salted water to a boil. Cook fettuccine until al dente. Reserve 1/2 cup pasta water, then drain.

4. Reduce skillet heat to medium. Melt butter, add minced garlic, and sauté until fragrant (about 1 minute).

5. Pour in heavy cream and bring to a gentle simmer. Add Velveeta cubes and stir until melted and smooth. Thin sauce with pasta water if needed.

6. Toss cooked fettuccine into the sauce. Slice the chicken and add on top.

7. Garnish with parsley and serve hot.

Notes

Use freshly minced garlic for a stronger, richer flavor in the sauce.

If sauce thickens while sitting, a splash of milk or pasta water brings it back to life.

For a smoky depth, paprika makes a big difference—especially if it’s smoked.
