Description

This Creamy Spinach Mushroom Shrimp Shells dish blends plump shrimp, earthy mushrooms, and tender spinach in a garlic-Parmesan cream sauce over shell pasta. It’s an elegant, comforting one-skillet dinner perfect for weeknights or special occasions.


Ingredients

12 oz medium shell pasta

1 lb jumbo shrimp, peeled and deveined

2 tbsp olive oil

2 tbsp butter

8 oz baby bella mushrooms, sliced

3 cups fresh spinach

3 cloves garlic, minced

1 small shallot or 1/4 small onion, finely chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp sea salt

1/2 tsp cracked black pepper


Instructions

1. Boil the pasta: Bring a large pot of salted water to a boil and cook shell pasta until just al dente. Drain and set aside.

2. Sauté the shrimp: In a large skillet over medium heat, heat olive oil. Cook shrimp for 2–3 minutes per side until pink and opaque. Remove from skillet and set aside.

3. Cook the mushrooms: Add butter to the same skillet, then add mushrooms. Cook until golden brown. Season lightly with salt and pepper.

4. Add aromatics: Stir in garlic and shallots. Cook for 2 minutes until soft and fragrant.

5. Wilt the spinach: Add spinach and cook until just wilted, stirring gently.

6. Make the cream sauce: Pour in heavy cream and stir in Parmesan cheese. Let simmer 3–5 minutes until slightly thickened.

7. Combine: Add shrimp and cooked pasta back to the skillet. Toss to coat everything evenly in the sauce.

8. Serve: Serve hot, garnished with additional Parmesan or parsley if desired.

Notes

Don’t overcook the shrimp. They should just turn pink—overcooking makes them rubbery.

Add a splash of white wine before the cream for extra depth.

Let the sauce simmer gently—rushing it may cause curdling or separation.
