This Creamy Spicy Thai Peanut Ramen is a flavor-packed bowl of comfort combining creamy peanut butter, spicy chili sauce, and aromatic coconut milk. Topped with crunchy peanuts, fresh herbs, and lime wedges, it’s a fast, satisfying meal with a Thai twist.
Ingredients
2 packs ramen noodles
3 tablespoons creamy natural peanut butter
2 tablespoons soy sauce
1 cup canned coconut milk
1 to 2 tablespoons chili garlic sauce (or sriracha, to taste)
1 tablespoon fresh lime juice
1 teaspoon grated ginger
2 cloves garlic, minced
1 medium carrot, julienned or cut into sticks
2 green onions, sliced
3 tablespoons crushed peanuts
2 tablespoons chopped fresh cilantro
Lime wedges, for serving
Instructions
1. In a medium saucepan, heat a drizzle of oil over medium heat. Add the minced garlic and grated ginger. Sauté for 1 minute until fragrant.
2. Pour in the coconut milk. Add the peanut butter, soy sauce, and chili garlic sauce. Whisk until smooth and bring to a gentle simmer.
3. Add the ramen noodles directly into the simmering broth. Cook according to package directions, about 3–4 minutes. Stir occasionally to prevent sticking.
4. When noodles are nearly done, stir in the carrot sticks and green onions. Cook 1–2 more minutes until slightly tender but still crisp.
5. Remove from heat. Stir in fresh lime juice.
6. Divide into bowls. Top each serving with crushed peanuts, cilantro, extra green onions, and lime wedges. Serve immediately.
Notes
Use natural, unsweetened peanut butter for a more authentic savory flavor.
Add cooked tofu, chicken, or shrimp if you want extra protein.
If reheating, add a splash of water or coconut milk to loosen the broth.
