Ingredients
12 oz rotini pasta (or any short pasta)
1 tablespoon olive oil
2 cloves garlic, minced
1 cup buffalo sauce
1 cup heavy cream
½ cup ranch dressing
1 ½ cups shredded cheddar cheese
½ cup mozzarella cheese (optional)
Salt and black pepper to taste
Crushed red pepper flakes (optional)
Fresh parsley or chives for garnish (optional)
Instructions
- Boil a pot of salted water and cook the rotini pasta until al dente. Drain and reserve ½ cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds.
- Stir in the buffalo sauce, heavy cream, and ranch dressing. Let it simmer for 3–4 minutes until slightly thickened.
- Reduce heat and add the cheddar and mozzarella cheese. Stir until completely melted and smooth.
- Season the sauce with salt, pepper, and crushed red pepper flakes if desired.
- Add the cooked pasta to the sauce and toss to coat evenly. Add reserved pasta water if needed.
- Serve hot, garnished with parsley or chives and additional black pepper.
