Ingredients
2 chicken breasts, diced
12 oz rotini pasta
1 1/2 cups shredded Pepper Jack cheese
1 cup heavy cream
2 cloves garlic, minced
2 tbsp butter
1 cup cherry tomatoes, halved
1 green bell pepper, chopped
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
- Heat oil in a skillet over medium-high. Cook chicken with salt and pepper until golden and done. Remove and set aside.
- In the same skillet, melt butter. Sauté bell pepper and cherry tomatoes for 3-4 minutes. Add garlic and cook 1 more minute.
- Lower heat to medium. Pour in heavy cream, then slowly stir in shredded Pepper Jack until sauce is smooth.
- Meanwhile, cook rotini according to package directions. Drain and reserve some pasta water.
- Return chicken to skillet and stir in cooked pasta. Toss everything together, adding reserved pasta water if needed.
- Adjust seasoning, garnish with parsley, and serve warm.
