Description

Creamy Pepper Jack Pasta is a spicy, creamy, and comforting dinner option packed with tender chicken, rotini pasta, and fresh vegetables. The bold Pepper Jack cheese melts perfectly into a rich sauce that clings to every bite. Great for busy weeknights or casual gatherings.


Ingredients

2 chicken breasts, diced

12 oz rotini pasta

1 1/2 cups shredded Pepper Jack cheese

1 cup heavy cream

2 cloves garlic, minced

2 tbsp butter

1 cup cherry tomatoes, halved

1 green bell pepper, chopped

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Heat oil in a skillet over medium-high. Cook chicken with salt and pepper until golden and done. Remove and set aside.
  2. In the same skillet, melt butter. Sauté bell pepper and cherry tomatoes for 3-4 minutes. Add garlic and cook 1 more minute.
  3. Lower heat to medium. Pour in heavy cream, then slowly stir in shredded Pepper Jack until sauce is smooth.
  4. Meanwhile, cook rotini according to package directions. Drain and reserve some pasta water.
  5. Return chicken to skillet and stir in cooked pasta. Toss everything together, adding reserved pasta water if needed.
  6. Adjust seasoning, garnish with parsley, and serve warm.
