Description

A decadent comfort meal featuring grilled chicken breasts topped with creamy mushroom garlic Alfredo sauce, paired with crispy hot honey roasted baby potatoes. Rich, hearty, and irresistible—perfect for a weeknight treat or cozy dinner at home.


Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic, minced

1 cup mushrooms, sliced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1 tablespoon fresh parsley, chopped

1 pound baby gold potatoes, halved

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

2 tablespoons hot honey


Instructions

1. Preheat oven to 425°F (220°C). In a mixing bowl, toss halved baby potatoes with olive oil, garlic, salt, and pepper. Spread them on a baking sheet in a single layer. Roast for 25–30 minutes until golden and crispy. Drizzle with hot honey in the last 5 minutes of roasting and toss to glaze.

2. Season chicken breasts with salt and pepper. Heat a cast iron skillet over medium-high heat with olive oil. Sear chicken for 5–6 minutes per side until cooked through and golden. Remove and let rest before slicing.

3. In a small saucepan, melt butter over medium heat. Add garlic and mushrooms, sauté until tender. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and season with pepper. Let sauce thicken slightly while stirring.

4. Slice the chicken and plate it over a generous serving of Alfredo sauce. Add roasted potatoes to the side, drizzle with extra hot honey if desired, and garnish with chopped parsley.

Notes

Let the chicken rest before slicing to keep it juicy and flavorful.

Don’t overcrowd the baking sheet—space allows the potatoes to crisp up.

Make the Alfredo sauce just before serving for the smoothest texture.
