Ingredients
1 lb chicken breasts, boneless and skinless
8 oz linguine pasta
4 cloves garlic, minced
1 cup shredded mozzarella cheese
1 cup heavy cream
1/3 cup grated Parmesan cheese
2 tbsp Cajun seasoning
2 tbsp butter
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Season chicken breasts on both sides with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 6–7 minutes per side until golden and cooked through. Set aside to rest.
3. Boil linguine in salted water until al dente. Reserve 1/2 cup of pasta water and then drain.
4. In the same skillet, melt butter and sauté minced garlic for 1–2 minutes until fragrant.
5. Add additional Cajun seasoning and pour in heavy cream. Stir until blended.
6. Lower the heat and stir in mozzarella and Parmesan. Mix until cheese is melted and sauce is creamy. Thin with reserved pasta water if needed.
7. Toss cooked linguine in the sauce until evenly coated.
8. Slice the cooked chicken and serve over pasta. Garnish with fresh parsley and extra Parmesan if desired.
Notes
Use freshly shredded mozzarella to prevent clumping and ensure a smooth sauce.
Adjust the heat level by increasing or decreasing the amount of Cajun seasoning or adding red pepper flakes.
For a richer sauce, add an extra tablespoon of butter before serving.
