Ingredients

1 lb chicken breasts

8 oz rotini pasta

1 cup heavy cream

4 cloves garlic, minced

1 cup freshly grated parmesan cheese

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped parsley (optional)

¼ cup reserved pasta water


Instructions

1. Season chicken breasts with salt, pepper, and Italian seasoning.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.

3. Boil rotini pasta in salted water until al dente. Reserve 1/4 cup of pasta water, then drain.

4. In the same skillet, melt butter. Add minced garlic and sauté for 1 minute until fragrant.

5. Pour in heavy cream and stir in the parmesan cheese. Whisk continuously until sauce thickens.

6. Add reserved pasta water to loosen the sauce, if needed.

7. Toss the cooked pasta into the sauce until evenly coated.

8. Return chicken to the skillet or serve it over the pasta.

9. Garnish with chopped parsley if desired. Serve hot.

Notes

For extra richness, add a tablespoon of cream cheese to the sauce.

Use freshly grated parmesan for the smoothest melt and best flavor.

If reheating, add a splash of cream or milk to maintain the sauce’s creamy texture.
