Ingredients

1 lb ground chicken

1 tsp lemon zest

4 cloves garlic, minced (divided)

2 tbsp fresh parsley, chopped (plus extra for garnish)

1/3 cup breadcrumbs

1 egg

Salt and pepper, to taste

1 tbsp olive oil (plus more if needed)

1 cup orzo pasta

2 cups chicken broth

1/2 cup heavy cream

1/3 cup grated parmesan cheese


Instructions

  1. Mix the Meatballs: Combine ground chicken, lemon zest, half the garlic, parsley, breadcrumbs, egg, salt, and pepper. Mix and form into small meatballs.
  2. Cook Meatballs: Heat olive oil in a skillet over medium. Sear meatballs on all sides until browned and cooked through (6–8 mins). Set aside.
  3. Toast Orzo: In the same skillet, add garlic and sauté for 1 min. Stir in orzo and toast for 2–3 mins.
  4. Simmer Sauce: Add chicken broth and simmer until mostly absorbed (8–10 mins). Stir in cream and parmesan. Cook 2–3 mins more.
  5. Finish Dish: Return meatballs to the skillet, heat through 3–4 mins. Garnish with parsley and serve hot.
