Ingredients
1 pound large shrimp, deveined and tail-on
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes
4 tablespoons unsalted butter
4 garlic cloves, minced
½ cup heavy cream
1½ cups cooked jasmine or basmati rice
¼ cup fresh parsley, chopped
¼ cup fresh cilantro, chopped
1 cup cherry tomatoes
Extra herbs for garnish (optional)
Instructions
1. Peel and devein the shrimp, leaving tails on.
2. In a bowl, toss shrimp with olive oil, salt, black pepper, and red pepper flakes.
3. Heat a large skillet over medium-high heat. Sear the shrimp in a single layer for 1–2 minutes per side. Remove and set aside.
4. Lower the heat and add butter to the same pan. Stir in minced garlic until fragrant, about 1 minute.
5. Pour in heavy cream and bring to a gentle simmer.
6. Return the shrimp to the pan and toss to coat in the creamy garlic sauce. Simmer for 1 more minute.
7. Prepare the rice if needed, then mix it with chopped parsley, cilantro, a drizzle of olive oil, and a pinch of salt.
8. Assemble bowls: scoop rice, add shrimp, drizzle with sauce, and top with cherry tomatoes and extra herbs.
