Creamy Garlic Butter Chicken and Rotini in Parmesan Sauce is a flavorful, comforting dish featuring golden-seared chicken and spiral pasta wrapped in a silky Parmesan cream sauce. It’s an easy yet impressive meal that’s perfect for weeknights or entertaining.


Ingredients

1.5 lbs boneless chicken breasts or thighs

12 oz rotini pasta

4 cloves garlic, freshly minced

3 tablespoons unsalted butter

1.5 cups heavy cream

1 cup freshly grated Parmesan cheese

1.5 teaspoons Italian seasoning

1 teaspoon salt

0.5 teaspoon cracked black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. 1. Season chicken with salt, pepper, and Italian seasoning.
  2. In a cast iron skillet over medium-high heat, sear chicken until golden and cooked through.
  3. Remove and slice. In a large pot, cook rotini in salted boiling water until al dente.
  4. Drain and reserve 1/2 cup pasta water.
  5. In the same skillet, melt butter and sauté garlic until fragrant.
  6. Add heavy cream and stir. Simmer for 2–3 minutes.
  7. Gradually whisk in Parmesan until smooth and creamy.
  8. Add cooked rotini to the sauce, using reserved pasta water to thin if needed.
  9. Return sliced chicken to skillet and stir to coat evenly.
  10. Garnish with parsley and extra Parmesan if desired.
  11. Serve warm.

Notes

Use freshly grated Parmesan for best texture and melting quality.

To lighten the sauce, use half-and-half instead of heavy cream.

Add a splash of reserved pasta water to reheat leftovers and loosen the sauce.
