Ingredients
1.5 lbs boneless chicken breasts or thighs
12 oz rotini pasta
4 cloves garlic, freshly minced
3 tablespoons unsalted butter
1.5 cups heavy cream
1 cup freshly grated Parmesan cheese
1.5 teaspoons Italian seasoning
1 teaspoon salt
0.5 teaspoon cracked black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
- 1. Season chicken with salt, pepper, and Italian seasoning.
- In a cast iron skillet over medium-high heat, sear chicken until golden and cooked through.
- Remove and slice. In a large pot, cook rotini in salted boiling water until al dente.
- Drain and reserve 1/2 cup pasta water.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add heavy cream and stir. Simmer for 2–3 minutes.
- Gradually whisk in Parmesan until smooth and creamy.
- Add cooked rotini to the sauce, using reserved pasta water to thin if needed.
- Return sliced chicken to skillet and stir to coat evenly.
- Garnish with parsley and extra Parmesan if desired.
- Serve warm.
Notes
Use freshly grated Parmesan for best texture and melting quality.
To lighten the sauce, use half-and-half instead of heavy cream.
Add a splash of reserved pasta water to reheat leftovers and loosen the sauce.
