Ingredients
1 lb Italian sausage
4 cups potatoes diced
2 cups kale chopped
1 medium onion diced
3 cloves garlic minced
4 cups chicken broth
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/2 cup Parmesan cheese grated
Instructions
1. Brown the sausage in a skillet over medium heat until fully cooked and slightly crispy.
2. Dice the potatoes, onion, and mince the garlic while the sausage cooks.
3. Add sausage, potatoes, onion, garlic, and chicken broth to the crockpot.
4. Cook on low for 6 to 7 hours or high for 3 to 4 hours until potatoes are tender.
5. Stir in kale and heavy cream during the last 20 to 30 minutes of cooking.
6. Add salt, pepper, Italian seasoning, and Parmesan cheese. Stir well and serve warm.
Notes
Use russet potatoes for a creamier texture as they break down slightly while cooking.
Add a pinch of red pepper flakes if you like a bit of heat in your soup.
For best flavor, always brown the sausage before adding it to the crockpot.
