1 ½ cups cooked shredded chicken

1 ½ cups elbow macaroni

1 cup diced carrots

½ cup diced onion

2 cloves garlic, minced

4 tablespoons butter

¼ cup all-purpose flour

4 cups chicken broth

2 cups whole milk

2 cups shredded cheddar cheese

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Italian seasoning


Instructions

1. In a large soup pot, melt butter over medium heat. Add diced onions, carrots, and garlic. Cook until the onions are translucent and fragrant.

2. Sprinkle flour over the vegetables and stir to coat. Cook for 1–2 minutes to remove raw flour taste.

3. Slowly whisk in chicken broth to form a smooth base. Bring to a simmer.

4. Stir in milk, bring back to a light simmer, then add cheddar cheese and stir until melted.

5. Add shredded chicken, salt, pepper, and Italian seasoning. Simmer for another 5–10 minutes.

6. Meanwhile, cook elbow macaroni in a separate pot until al dente. Drain and stir into the soup.
