Ingredients

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

8 ounces rotini pasta

2 tablespoons butter

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley (optional)

Salt to taste

Pepper to taste


Instructions

1. Season chicken with Cajun seasoning on both sides.

2. Heat olive oil in a skillet over medium-high heat and sear chicken 4–5 minutes per side until golden and cooked through. Set aside to rest, then slice.

3. Cook rotini pasta in salted boiling water according to package instructions. Drain and set aside.

4. In a saucepan, melt butter over medium heat. Add garlic and sauté for 30 seconds.

5. Stir in heavy cream and bring to a simmer. Gradually whisk in mozzarella and Parmesan until melted and smooth. Season with salt and pepper.

6. Toss drained pasta into the sauce and simmer 1–2 minutes to coat and absorb flavor.

7. Plate the pasta and top with sliced Cajun chicken. Garnish with parsley if desired.

Notes

For crispier chicken, use a cast iron skillet and let it sear undisturbed.

Don’t overheat the Alfredo sauce—low heat helps cheese melt smoothly without separating.

Add a splash of cream when reheating leftovers to maintain that creamy texture.
