Ingredients

1 lb chicken breast or thighs

9 oz cheese tortellini

1 cup Velveeta cheese, cubed

3/4 cup heavy cream

3 cloves garlic, minced

1 tablespoon Cajun seasoning

1 tablespoon olive oil or butter

1 tablespoon fresh parsley, chopped

Salt and black pepper, to taste


Instructions

1. Pat chicken dry and cut into bite-sized chunks or leave whole. Season with Cajun seasoning, salt, and pepper.

2. In a skillet over medium-high heat, add olive oil or butter. Sear chicken until golden and cooked through. Remove and set aside.

3. In a medium saucepan, cook tortellini according to package instructions. Drain and set aside.

4. Lower the heat on the skillet, add minced garlic, and sauté until fragrant.

5. Add heavy cream and stir in Velveeta cheese gradually until melted and smooth.

6. Return chicken and tortellini to the skillet and stir to coat everything in the creamy sauce.

7. Garnish with chopped parsley and cracked pepper before serving.
