This Creamy Cajun Chicken Pasta delivers bold flavor and comforting richness in every bite. Spiced and seared chicken breast is sliced over a bed of penne pasta tossed in a creamy garlic sauce made with Parmesan and mozzarella. It’s quick enough for a weeknight but satisfying enough to impress guests.
Ingredients
2 boneless skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter (divided)
3 garlic cloves minced
1 cup heavy cream
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
12 ounces penne pasta
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts with Cajun seasoning on both sides.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and rest.
3. In a large pot, boil salted water and cook penne pasta until al dente. Drain and reserve 1/4 cup of pasta water.
4. In the same skillet, add remaining butter and garlic. Sauté until fragrant (about 1 minute).
5. Pour in heavy cream and bring to a simmer.
6. Stir in Parmesan and mozzarella cheese, whisking until fully melted and smooth.
7. Add cooked pasta to the sauce and toss until coated. Use reserved pasta water if needed to loosen.
8. Slice the rested chicken and place on top of the pasta.
9. Garnish with fresh parsley and serve hot.
Notes
For extra richness, add a small splash of pasta water to the sauce as needed while mixing.
Always let the chicken rest before slicing to retain its juices.
Freshly shredded cheese melts smoother and tastes better than pre-packaged cheese.
