Ingredients
2 large chicken breasts
2 tablespoons Cajun seasoning
10 oz fettuccine pasta
4 cloves garlic, minced
1 ½ cups heavy cream
1 ½ cups fresh mozzarella cheese, shredded
2 tablespoons butter
1 tablespoon olive oil
2 tablespoons chopped parsley
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Pat the chicken breasts dry and season generously with Cajun seasoning. Let sit at room temperature for 10 minutes.
2. In a skillet, heat olive oil over medium-high heat. Sear chicken for 6–7 minutes per side until golden and cooked through. Remove and rest before slicing.
3. In a large pot of salted water, cook fettuccine until al dente. Reserve ½ cup pasta water, then drain.
4. In the skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
5. Pour in heavy cream and whisk to combine. Slowly stir in shredded mozzarella until fully melted and smooth.
6. Add reserved pasta water to thin the sauce if needed.
7. Toss cooked fettuccine in the sauce until fully coated.
8. Slice chicken and place on top of pasta.
9. Garnish with chopped parsley and black pepper. Serve warm.
Notes
Use freshly shredded mozzarella for best melt and flavor—pre-shredded may result in a grainy texture.
For extra spice, add red pepper flakes or a dash of cayenne to the sauce.
Let the chicken rest before slicing to retain juices and avoid drying out the meat.
