It’s a no-cook, flavor-packed dip made with sour cream, Rotel tomatoes, ranch seasoning, and a mix of crunchy vegetables and cheese. Perfect for tortilla chips or as a zesty topping!



Ingredients

1 (10 oz) can Rotel tomatoes with green chilies, drained

1 cup sour cream (or Greek yogurt)

1 cup shredded cheddar cheese

1 cup canned corn, drained

1/2 red bell pepper, finely diced

1/4 cup red onion, finely chopped

1 packet ranch seasoning mix

Optional: 1 jalapeño, finely chopped

2 tbsp fresh cilantro or parsley, chopped

Salt and pepper to taste


Instructions

  1. Dice red bell pepper, red onion, and jalapeño (if using).
  2. Drain corn and Rotel tomatoes thoroughly.
  3. In a large bowl, mix sour cream and ranch seasoning until well combined.
  4. Add Rotel, corn, cheese, red bell pepper, red onion, and jalapeño. Stir until everything is evenly coated.
  5. Season with salt and pepper to taste.
  6. Transfer to serving dish or jar. Cover and chill for at least 1 hour.
  7. Garnish with chopped cilantro or parsley.
  8. Serve with tortilla chips, crackers, or veggies.
