Ingredients
1 (10 oz) can Rotel tomatoes with green chilies, drained
1 cup sour cream (or Greek yogurt)
1 cup shredded cheddar cheese
1 cup canned corn, drained
1/2 red bell pepper, finely diced
1/4 cup red onion, finely chopped
1 packet ranch seasoning mix
Optional: 1 jalapeño, finely chopped
2 tbsp fresh cilantro or parsley, chopped
Salt and pepper to taste
Instructions
- Dice red bell pepper, red onion, and jalapeño (if using).
 - Drain corn and Rotel tomatoes thoroughly.
 - In a large bowl, mix sour cream and ranch seasoning until well combined.
 - Add Rotel, corn, cheese, red bell pepper, red onion, and jalapeño. Stir until everything is evenly coated.
 - Season with salt and pepper to taste.
 - Transfer to serving dish or jar. Cover and chill for at least 1 hour.
 - Garnish with chopped cilantro or parsley.
 - Serve with tortilla chips, crackers, or veggies.
