Ingredients
2 cups fresh cranberries
1 cup crushed pineapple, drained
1 cup mini marshmallows
1 cup whipped topping (like Cool Whip)
½ cup granulated sugar
½ cup chopped pecans (optional)
Instructions
1. Rinse and drain the cranberries, then pulse in a food processor until finely chopped (not pureed).
2. Transfer chopped cranberries to a bowl, mix with sugar, and let sit for 30 minutes to macerate.
3. Stir in the drained crushed pineapple and mini marshmallows.
4. Gently fold in the whipped topping with a rubber spatula until just combined.
5. If using pecans or other add-ins, fold them in at this stage.
6. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to blend.
7. Stir gently before serving cold.
