Ingredients
2 cups shredded cooked chicken
8 oz cream cheese, softened
1 cup sour cream
1 packet ranch seasoning mix
1 1/2 cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup chopped green onions
1 sleeve Ritz crackers, crushed
4 tablespoons melted butter
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
2. In a large mixing bowl, combine shredded chicken, cream cheese, sour cream, ranch seasoning, cheddar cheese, and half the bacon. Mix until well combined.
3. Spread the mixture evenly into the prepared baking dish.
4. Sprinkle the remaining bacon and green onions over the top.
5. In a separate bowl, combine crushed Ritz crackers with melted butter. Sprinkle this mixture evenly on top of the casserole.
6. Cover loosely with foil and bake for 20 minutes.
7. Remove foil and bake an additional 10–15 minutes, until the top is golden and the casserole is bubbly.
8. Let it cool slightly before serving. Enjoy!
Notes
Make ahead: Assemble the casserole up to a day in advance, but add the cracker topping right before baking.
