Ingredients
1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1/2 tsp garlic powder
1 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp lemon juice
1 tsp Dijon mustard
1/2 tsp red pepper flakes (adjust to taste)
2 tbsp chopped fresh parsley
Instructions
- Season the Chicken: In a bowl, toss chicken pieces with salt, pepper, paprika, and garlic powder.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in batches, cooking until golden brown and cooked through. Set aside.
- Prepare Cowboy Butter: In the same skillet, melt butter. Stir in garlic, lemon juice, Dijon mustard, red pepper flakes, and parsley. Cook for 1 minute until fragrant.
- Combine and Finish: Return cooked chicken to the skillet and toss in the cowboy butter until fully coated. Let simmer for 1 more minute.
- Serve: Garnish with extra parsley and serve immediately.
