Ingredients
1 lb ground beef
1 medium onion, chopped
1 bell pepper, chopped (red or green)
2 cloves garlic, minced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) navy beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1/2 cup BBQ sauce
2 tbsp brown sugar
1 tbsp chili powder
Salt and pepper to taste
1 cup shredded cheddar cheese (optional, for topping)
Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or Dutch oven, brown the ground beef over medium heat. Drain excess grease.
- Add chopped onion, bell pepper, and minced garlic. Cook for 5-7 minutes until vegetables are soft.
- Stir in kidney beans, pinto beans, navy beans, diced tomatoes, and tomato sauce.
- Mix in BBQ sauce, brown sugar, chili powder, salt, and pepper.
- Reduce heat and simmer uncovered for 20-30 minutes, stirring occasionally.
- Top with shredded cheddar and parsley just before serving. Serve hot.
