Ingredients
6 large eggs
1 cup cottage cheese
1/2 cup shredded cheddar cheese
1/4 cup diced bell pepper (optional)

Instructions
- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Blend eggs and cottage cheese until smooth.

- Pour mixture into muffin cups, filling each 3/4 full.
