Description

Cottage Cheese Egg Bites are creamy, protein-rich, and oven-baked in a muffin tin for the ultimate convenient breakfast. Packed with cottage cheese, eggs, and your favorite mix-ins, they’re ideal for busy mornings and meal prepping.


Ingredients

6 large eggs

1 cup cottage cheese

1/2 cup shredded cheddar cheese

1/4 cup diced bell pepper (optional)

1/4 cup chopped spinach or kale (optional)

Salt and pepper to taste

Butter or non-stick spray (for greasing muffin tin)

Fresh herbs for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Blend eggs and cottage cheese until smooth.
  3. In a bowl, mix the blended base with cheddar cheese, bell pepper, spinach, salt, and pepper.
