Description
These Costco Marshmallow Crispy Cookies combine soft, chewy centers with gooey marshmallows and a crispy cereal crunch. A nostalgic twist on classic cookies, they’re rich, golden, and perfect for sharing or freezing.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mini marshmallows
1 1/2 cups crispy rice cereal
3/4 cup white chocolate chips (optional)
Instructions
1. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
2. Add in the egg and vanilla extract. Beat until smooth and fully incorporated.
3. In a separate bowl, whisk together flour, baking soda, and salt. Slowly mix into the wet ingredients until combined.
4. Fold in mini marshmallows, crispy rice cereal, and white chocolate chips if using. Be gentle to avoid crushing the cereal.
5. Scoop dough using a cookie scoop and place onto a parchment-lined baking sheet. Chill the dough for 30 minutes.
6. Preheat the oven to 350°F (175°C).
7. Bake for 10–12 minutes, until the edges are golden and the centers appear slightly underbaked.
8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for at least 30 minutes for thick, bakery-style cookies that don’t overspread.
Don’t overbake! The cookies should look slightly underdone in the center for the perfect chewy bite.
Fold marshmallows into the center of each dough ball to prevent too much melting on the baking sheet.
