2 pounds Russet or Yukon Gold potatoes
1 large onion
3 large eggs
1/4 cup flour or matzo meal
1/4 cup oil or schmaltz
2 teaspoons salt
1/2 teaspoon black pepper
Instructions

- Peel and grate potatoes and onion. Squeeze out as much liquid as possible.
- In a large bowl, combine potatoes, onions, eggs, flour or matzo meal, salt, and pepper.
