Description
This Classic Homemade Caesar Dressing is bold, creamy, and packed with flavor from fresh garlic, anchovy paste, and lemon juice. Perfect for drizzling over salads, wraps, or using as a dip, it comes together in just minutes and stores beautifully in the fridge.
Ingredients
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon anchovy paste
2 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1/2 cup Parmesan cheese, freshly grated
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a blender or bowl, combine mayonnaise, Dijon mustard, anchovy paste, garlic, and lemon juice. Blend or whisk until fully combined.
2. Slowly drizzle in olive oil while continuously blending or whisking to create a smooth emulsion.
3. Stir in Parmesan cheese, Worcestershire sauce, salt, and black pepper. Adjust seasoning to taste.
4. Transfer to a jar or container and refrigerate for at least 30 minutes before serving.
Notes
For a traditional touch, substitute mayonnaise with 1 egg yolk and emulsify carefully.
Let the dressing rest in the fridge before serving to allow flavors to blend.
Always use freshly grated Parmesan for the best flavor and consistency.
